I myself am a confirmed choc-a-holic.
Chocolate candy.  Chocolate Mousse or is it mouse?  I forget, anyway, if it has chocolate in it, then it is a perfectly legitimate reason for a large glass of Port wine, because nothing, I mean nothing, enhances the flavor of chocolate like a good glass of Port, so…

Bottoms up (No explanation needed)
Le’ chaim (To life)
Ess gezunterhait (Eat in good health)

I don’t know why, but it just sounds better in Yiddish for some reason!

Sample Recipe from Cake Section – German Coffee Cake Recipe

This little gem comes from Darmstadt Germany……Just outside of Frankfurt

3 cups all-purpose flour
4 tsp. baking powder
1 tsp. salt
¼ tsp. nutmeg
¼ tsp. cinnamon
¾ cup sugar
¼ cup shortening
1 cup milk
2 eggs

Sift together flour, baking powder, salt, spices, and sugar. Work the dry ingredients into the shortening. Add eggs and milk, stirring till smooth. Pour into a greased 9 X 12 inch baking pan.

Topping

¼ cup shortening
1 cup brown sugar
1/8 tsp. salt
¼ cup all-purpose flour
½ tsp. cinnamon
1 cup coarsely chopped black walnuts

With a fork, blend all but the walnuts, and spread evenly on top of batter in pan. Sprinkle the walnuts over all. Bake in a 350 degree F. oven for approximately 30 minutes. Cool on a wire rack.

Sample Recipe from Pie Section – Shoofly Pie Recipe

During WWII, there was a popular song called “Shoofly Pie and Apple Pandowdy”.

1 cup all-purpose flour
2/3 cup firmly pack brown sugar
¼ tsp. salt
5 tbsp. unsalted butter
2/3 cup very hot water
5 tbsp. blackstrap molasses
1 tbsp. dark brown sugar
½ tsp. baking soda
1 unbaked 8 inch pie shell

Combine flour, 2/3 cup brown sugar, and salt in a mixing bowl. Cut in butter with a pastry blender till particles look like small beans; set aside.

Blend hot water with molasses, 1 tbsp. brown sugar, and baking soda.

Reserving 3 tbsp. crumb mixture for topping, stir molasses mixture into remaining crumb mixture. Pour into unbaked pie shell. Sprinkle reserved crumb mixture over filling.

Bake in a 350 degree F. oven 35-40 minutes or until top springs back when touched lightly.
