Sample Recipe – Paella
4 chicken breasts, boned, skinned, cut into strips
10 – 12 oz. chorizo, well crumbled
1 large yellow onion, well chopped
1 large bud garlic, minced
1 tsp. paprika
3 tbsp. fresh parsley, well chopped
¼ – ½ tsp. freshly ground black pepper
1 cup chicken stock (see page 6)
1 cup rice, uncooked (I prefer brown, suit yourself)
2 ½ tbsp. pimento, chopped
16 oz. (2 medium cans) artichoke hearts, drained
½ – ¾ lb. large shrimp cooked and de-veined (Tiger Prawns will do nicely)
1 cup fresh green peas
½ tsp. saffron (optional since it is quite expensive)
2 tbsp. virgin olive oil
Cut chicken into strips and brown in olive oil; add the chorizo (sausage) and heat well. Remove the chicken and chorizo from pan and sauté onion and garlic till just brown. Add paprika, pepper, parsley and chicken stock; bring to a boil. Add rice and pimento. Cover and simmer approximately 45 – 50 minutes or until rice is cooked. Add the chicken, chorizo, artichokes, shrimp, and sprinkle the peas over the top, then sprinkle the saffron over it all. Cover and simmer an additional 10 – 12 minutes until all is heated clear through.
